Potato Salad Recipe

 

Ingredients

 

  • 10-12 Red Bliss potatoes, boiled

  • 6 hard-boiled eggs, shelled

  • 3 tablespoons mayonnaise, plus additional if needed

  • 1/2 teaspoon curry powder, plus additional to taste

  • Salt to taste

  • Pepper to taste

  • 1/2 cup black olives

  • 1/2 cup cocktail olives (reserve 1 tablespoon of the brine)

 

Preparation

 

Cut the potatoes and eggs into small chunks about a 1/2 inch square. Put them in a bowl with the mayonnaise, curry powder, salt, pepper, olives, and reserved brine and mix until well combined. If you find that the ingredients aren't wet enough, you can add more mayonnaise — everything should hold together nicely. Let stand overnight to give the ingredients a chance to marinate. Taste the next day for seasoning. If necessary, add more curry powder, salt, or pepper.

Dark Chocolate Crumb Bars Recipe

 

Ingredients

 

  • 3/4 cup butter, softened

  • 1 3/4 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 1/4 teaspoon salt         

  • 1 2/3 cups NESTLE® TOLL HOUSE® Dark Chocolate Morsels, divided          

  • 1 (14 ounce) can NESTLE® CARNATION® Sweetened Condensed Milk

  • 1 teaspoon vanilla extract

  • 1 cup chopped walnuts(optional)

 

Preparation

 

1.     Preheat oven to 350 degrees F. Grease 13 x 9-inch baking pan.

2.     Beat butter in large mixer bowl until creamy. Beat in flour, sugar and salt until crumbly. With floured fingers, press 2 cups crumb mixture onto bottom of prepared baking pan; reserve remaining mixture.

3.     Bake for 10 to 12 minutes or until edges are golden brown.

4.     Combine 1 cup morsels and sweetened condensed milk in small, heavy-duty saucepan. Warm over low heat, stirring until smooth. Stir in vanilla extract. Spread over hot crust.

5.     Stir nuts and remaining 2/3 cup morsels into reserved crumb mixture; sprinkle over chocolate filling. Bake for 25 to 30 minutes or until center is set. Cool in pan on wire rack. Cut into bars.

Spicy Chicken Coconut Curry Recipe

 

Ingredients

 

  • 3 tablespoons Ghee, recipe follows

  • 2 medium onions, chopped

  • 1 -inch piece ginger, peeled and finely chopped

  • 4 garlic cloves, finely chopped

  • 2 tablespoons tomato paste

  • 2 tablespoons Curry Powder, recipe follows

  • 1 cinnamon stick

  • 1 to 3 dried red chiles

  • Kosher salt and freshly ground black pepper

  • 2 (15-ounce) cans unsweetened coconut milk

  • 2 cups chicken stock

  • 4 tomatoes, seeded and chopped

  • 6 boneless, skinless chicken breasts, cut into 1-inch strips

  • 1/4 cup cilantro leaves, plus more for garnish

  • 1 lemon, juiced

  • Mint leaves, for garnish

  • Ghee:

  • 1 pound unsalted butter

  • Curry Powder ( Garam Masala):

  • 2 tablespoons coriander seeds

  • 1 tablespoon cumin seeds

  • 1 tablespoon cardamom seeds

  • 1 tablespoon whole black peppercorns

  • 1 teaspoon fennel seeds

  • 1 teaspoon mustard seeds

  • 1/2 teaspoon whole cloves

  • 2 dried red chiles, broken in pieces, seeds discarded

  • 2 tablespoons turmeric

 

Preparation

 

Heat the ghee in a large heavy-bottomed pot over medium-low heat. Add the onions, ginger, and garlic and cook slowly until the onions are very soft, about 15 minutes. Add the tomato paste, curry powder, cinnamon stick, and chiles and give it a good stir; season with salt and pepper. Pour in the coconut milk and chicken stock and bring it back to a simmer; cook until the sauce has thickened, about 20 minutes. Add the tomatoes, chicken, cilantro, and half the lemon juice; continue to simmer until the chicken is cooked through, about 10 to 15 minutes. Taste and adjust the seasoning with lemon juice, salt and pepper. Garnish with cilantro and mint leaves.

Ghee:
Put the butter in a heavy saucepan over medium-low heat. Melt the butter slowly and make sure it does not sizzle or brown. Increase the heat and bring the butter to a boil. When the surface is covered with foam, stir gently and reduce the heat to the lowest possible setting. Gently simmer, uncovered, and undisturbed for 45 minutes, until the milk solids in the bottom of the pan have turned golden brown and the butter on top is transparent. Strain the ghee through a sieve lined with several layers of cheesecloth. The ghee should be perfectly clear and smell nutty; pour into a glass jar and seal tightly.

Curry Powder ( Garam Masala):
Toast the coriander, cumin, cardamom, peppercorns, fennel, mustard, cloves, and the chiles in a small dry skillet over medium-low heat just until they smell fragrant, about 2 minutes. In a clean coffee grinder or spice mill, grind the toasted spices together to a fine powder. Add the turmeric and give it another quick buzz to combine. Use the curry powder immediately, or store in a sealed jar for up to 1 month.

Ingredients

 

  • 2 tablespoons pork or bacon grease

  • 1 1/2 cups stone-ground cornmeal (white or yellow)

  • 1/2 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup fresh corn kernels, cut from the cob with milk from the cob

  • 2 large eggs, beaten

  • 1 cup buttermilk

  • 1 cup pork cracklings or 5 slices bacon, cooked and crumbled butter, for garnish

 

Preparation

 

Place 2 tablespoons of pork fat or bacon grease in a 9-inch cast iron skillet, place in oven, and preheat oven to 400 degrees F.

Meanwhile, combine cornmeal, flour, baking powder, and salt in a mixing bowl. Add corn kernels and milk, eggs, buttermilk, and cracklings and stir until well blended. Pour in hot skillet (preheated for 12 to 15 minutes) and bake for 25 to 30 minutes. Cut into wedges and serve warm with fresh butter.

Grilled Steak with Whiskey Butter Recipe

 

Ingredients

 

  • Whiskey Butter:

  • 2 sticks unsalted butter, softened

  • 2 shallots minced, soaked in 1 shot of Jack Daniels or other   whiskey or bourbon

  • 3 teaspoons minced parsley

  • 1/2 teaspoon Worcestershire sauce

  • 1/2 teaspoon Dijon mustard

  • 3 teaspoons Jack Daniels or other whiskey

  • 1/2 teaspoon sea salt

  • White pepper to taste

  • Steaks:

  • 4 cowboy steaks, bone-in rib eye steaks, or other favorite steak,

  • about 1-inch thick

  • 1 teaspoon kosher salt

  • 1/4 teaspoon whole black peppercorns, coarsely ground

  • Olive oil

  • Chopped parsley, optional

 

Preparation

 

Whiskey Butter:

  • Make Butter at least 3 hours in advance. Combine butter, shallots soaked in Jack Daniels (or other bourbon or whiskey), parsley, Worcestershire, mustard, whiskey, salt, and pepper. Mix well. On a piece of plastic wrap, drop butter in spoonfuls to form a log. Roll butter in plastic wrap and smooth out to form a round log. Refrigerate until hard and easy to slice into round, coin-shaped pieces.

 

Steaks:

  • Allow meat to come to room temperature about 15 minutes before grilling.

  • Just before grilling, brush both sides of the steaks with the oil and season with salt and pepper.

  • Place steaks directly over medium-high heat for about 1 to 2 minutes, just long enough to get good grill marks. Turn steaks and sear the other side. Move steaks to indirect heat and continue cooking for about 7 more minutes for medium rare.

  • Remove steaks from the grill, top with a pat of the whiskey butter and allow to rest at least 5 minutes but no longer than 10 before serving.

  • Spread the melted butter all over the tops of the steaks and top each with a fresh slice of the whiskey butter and parsley, if desired.
